Irish Whiskeys
Most Irish whiskeys are now made in one of the three major distilleries remaining in Ireland: the two Irish Distillers Company sites of Midleton near Cork and Bushmills in Northern Ireland, and the more recent Cooley Distillery.
Most Irish Whiskeys are triple distilled, although some, like Scotch, are only distilled twice and can also be peated. Peated whiskeys, such as Connemara, are made by drying the malted barley over peat fires to give rich smoky flavours.
The very best whiskeys are made solely in the traditional pot still, including the Red Breast 12 Year Old, Green Spot and Midleton Very Rare.
