Hollick
Ian Hollick studied Agricultural Science before joining Mildara Blass, progressing to become manager of Mildara vineyards nationally. In 1974 Ian and his wife Wendy bought their first 22 hectares of land in the Coonawarra. Now expanded to 55 hectares and with new winemaker David Norman at the helm, Hollick wines are truly representative of Coonawarra. The 1999 Shiraz-Cabernet has ripe black berry fruit and ground black pepper characteristics from Shiraz and structure, balance and rich cassis flavours from the Cabernet. The 2000 Sauvignon Blanc-Semillon is a lively wine showing the fruit characteristics of the grapes. The citrus flavours marry with the pineapple and tropical fruit flavours of the Sauvignon Blanc.
