Domaine Clos de Cazaux
The 15 ha vineyards, situated in the village of Gigondas are planted with 30 to 50 years old vines planted on the very stoney, limestone hillsides of the "Dentelles de Montmirail".
Yields produced are very small (25hl/ha). Harvesting is done manually and the grapes are put directly into the fermentation vats. Fermentation lasts for 2 weeks. The must is then pressed and blended. The wine then remains in stainless steel vats to undergo its malolactic fermentation and ages for about two years. A light filtration is carried out before bottling.
