Château Cissac

The 50 hectare vineyard is located just north of the town of Cissac in the Haut-Médoc appellation, with vines planted on a fine gravel soil over a stratum of chalk. The varietals cultivated comprise of 75% Cabernet Sauvignon, 20% Merlot and 5% Petit Verdot. The grapes are harvested by hand, and the wine is fermented in ten wooden vats. They are particularly proud of the wooden vats, which are over a century old and were restored in 1997. After 3 weeks fermentation the wine is then transferred into oak barrels for 18 months, of which 30% to 40% are new.
